Who doesn’t love a great sheet pan meal? I love that these meals are rather quick to prepare and cook up in about 30 minutes or less. During a busy weeknight or even weekend now that spring sports are getting started, I love any easy meal that does not take forever and can get from the oven to table within the hour.

I have always loved chicken fajitas and this sheet pan meal is absolutely delicious (ask my husband, he would have to agree). I think what makes this meal so delicious is using chicken tenders vs chicken breasts. The chicken remains tender and does not get dried out. I highly recommend trying out this recipe on a busy night and instead of eating out, you have a delicious meal at home. Plus it is kid friendly (we made a chicken fajita quesadilla for my youngest and he loved it!). Ingredients

-2 pounds of Chicken Tenders

-2 Bell Pepper (I love yellow and orange but any color will do based on your preference

-2 large shallots (or you can use onions here)

-1 lime

-3 tablespoons of olive oil

Fajita Seasoning Mix

-1 tsp chili powder

-1 tsp garlic powder

-1 tsp paprika

-1 tsp oregano

-1 tsp cumin

-1 tsp salt

-1/2 tsp pepper

Fajita Toppings

-Tortillas

-Lettuce

-Salsa/Taco Sauce

-Guacamole

-Olives

-Sour Cream (for dairy free, I love plain coconut yogurt. My favorite brand is Culina)

-Tortilla chips (We love Siete brand both corn and grain free)

Instructions

1.        Preheat oven to 425 degrees Fahrenheit

2.        Cut up chicken tenders into ¼ inch cubes

3.        Cut peppers and shallots

4.        Place chicken, peppers, onions, and olive oil in a bowl.

5.        Mix all seasoning ingredients in small bowl and pour over chicken and veggies. Mix well.

6.        Place fajita mix on a sheet pan and I will also place a cooling rack on top so all the juiced can run free and allow for tenderness of the chicken and veggies.

7.        Bake for 25 minutes. If you would like to crisp the fajitas up at the end, you can broil for 1 minute.

8.        Take out of the oven and let cool. Serve when warm.

Leftovers are great for lunch the next day! Enjoy!!
