
My husband and I love Mediterranean food and all the different flavors. With having food sensitives, what better way to enjoy your favorite dish than be able to cook it at home. I really love these Greek meatballs and I love to pair it with roasted potatoes and a simple Greek salad. I love this recipe because there are different ways you can change it up or do substitutions based on what you like. Plus, this recipe doesn’t use too many dishes, making for easy clean up (you may notice that I love an easy recipe with quick clean up!).
Greek Meatballs
· 1 pound ground beef
· 1 pound ground pork (you could substitute ground beef, ground chicken, or lamb here)
· 1 cup chopped shallots or onion
· 1 tsp dried parsley
· 5 tsp minced garlic
· 1 tbsp olive oil
· 1 tsp dried oregano
· 1 tsp salt
· 1/2 tsp black pepper
Instructions
1. Preheat oven to 350 degrees.
2. Combine all ingredients in a bowl and form meatballs about ½ inches.
3. Using a cooking sheet with rack on top (I like this because it allows the juices to run off into the pan) and place the meatballs on the rack.
4. Bake for 25 minutes or until meatballs are browned and the internal temperature reaches 165 degrees.
5. Serve with roasted potatoes or rice and a Greek salad

Roasted potatoes
· 1 pound of mini golden or red potatoes cut in half (I love the Little Potato Company
· Olive Oil
· Salt
· Pepper
Instructions
1. Preheat oven to 425 degrees (I tend to use the convection mode)
2. Place the cut potatoes in a bowl with olive oil and sprinkle salt and pepper.
3. Place on a parchment lined baking sheet and bake for 20 minutes and flip. I tend to cook for at least 10 minutes to get nice and browned and cooked through.

Greek Salad
· Romaine or mixed greens
· Cucumber
· Celery
· Olives (black or kalamata)
· Bell Pepper
· Red onion or shallot, sliced
· Feta (since I am dairy free I love Violife Feta cheese)
· Salad dressing (love a good Italian, such as Primal Kitchen Oil and Vinegar)

Tzatziki Sauce
· Plain Greek Yogurt (I use Culina plain coconut yogurt for dairy free)
· Lemon Juice
· Dill
· Salt
Instructions
1. I just scoop a bunch of plain yogurt into a bowl and add lemon juice, dill and salt to taste, doing a taste test throughout just to check the flavor and adding additional seasoning as needed.
