
The weather is getting warmer and that means more dinners that we are using the grill. One of our favorite things to grill are steaks, in particular flank steak (we get all our meat from Zoe Farms. If you haven’t checked them out, I highly recommend it). When we grill flank steak in particular, we like to make fajitas or steak bowls. In this blog post, I am going talk about steak bowls, but feel free to adjust this recipe to suit your needs and what you like and have on hand at your house.
Ingredients
1 Flank Steak (we have also used flat iron or filets as well for the tenderness), salted
1 Cup of Rice
1 Cup of Bone Broth
2 Bell Peppers (I like sweet so we used yellow and orange), sliced and de-veined
2 Shallots (you could also use red or yellow onions), sliced
Sliced Olives
Lettuce
Instapot
10 inch stainless steel pan
Meat Thermometer (we love the Thermapen)
Olive Oil
Salt and Pepper
Ranch dressing (we used Tessamae’s Creamy ranch for a dairy free option, but you could also use Primal Kitchen as well)
Instructions
1. Place the rice and bone broth in the instapot and place on rice mode (You can also just follow the instructions for cooking the rice on the stove if you don’t have an instapot).
2. While the rice cooks, chop the peppers and shallots.
3. Sauté the veggies in olive oil over medium heat, tossing frequently. They are done when slightly browned and tender.
4. Preheat the grill on high heat. Place the salted steak on the grill, cooking about 2 minutes on each side. (Take note that depending on how hot your grill gets, it may take shorter or longer). The steak is flipped about three times and is taken off the grill when internal temperature is 130 degrees. It will continue to cook inside once taken off and we let it cool for 5-10 minutes prior to slicing.

5. Once the steak is sliced, you can build your bowl with lettuce, rice, veggies, steak, olives, and ranch dressing.
