When you are busy during the week and don’t know what to make for dinner but want a quick one pan meal and little clean up. You turn to this delicious one pot pasta meal that you can whip up in 30 minutes or less, leaving you more time to hang out with your family or watching your favorite TV show vs. spending all evening cleaning up the kitchen. This pasta dish is pretty healthy and many of the ingredients you probably already have on hand. It makes for great leftovers the next day too when you are in a hurry and need a quick meal.

Ingredients

1 cup of coconut milk (I used the can of Thai Full fat coconut milk but you can use what milk you would prefer

2 cups of Chicken broth

1 tbsp of arrowroot starch (you could also use corn starch, potato starch, or even flour for thickening)

1 pound of ground beef

¾ tsp of salt

¼ tsp of pepper

½ onion (I used a shallot)

2 cloves of garlic

1 ¼ cup of Marinara sauce (I love Rao’s)

2 cups of elbow pasta (I used Jovial Grain free Pasta but you can use whatever elbow pasta you would like)

Directions

1.        In a large bowl, stir the coconut milk, broth, and arrowroot (or other thickening agent you choose). Whisk well and set aside.

2.        Use a large deep pan (I love my All Clad week night pan) and brown the ground beef. Add the salt and pepper.

3.        Add in the garlic and onion and cook until softened, about 2-3 minutes.

4.        Stir in the broth mixture, tomato sauce, and uncooked pasta. Stir to combine.

5.        Turn the heat up to medium high and bring to boil. Reduce the heat and cook 12-14 minutes, stirring frequently. The pasta will be ready when the sauce is reduced and the pasta is cooked through.
